WHere is a home-style version of a beverage featured on a new drinks list. It's a batch prepared mix which is bursting with flavours associated with Christmas time, rendering it excellent for a holiday party. Reserve the remaining cordial you can use for brunch beverages, puddings, or to mix additional servings of bikinis.
Bikini
Makes enough for 10 guests
To make the Clementine Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar
To make the Premix (produces 850ml, enough for 10)
400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, to finish
Directions
Making the Cordial: Combine the listed items in a pan, bring to a simmer, stirring so the sugar melts. After that, turn off the heat and let it to cool down fully. Pour into a sealable bottle, cap it keeping it chilled, it will last for about four weeks.
For the Premix: Combine the specified liquids in a sizeable container, let it rest for one hour, then pass it through , ideally through a fine cloth, making it completely strained.
To serve: Pour 85ml of the cocktail base into a stirring glass packed with ice, gently stirring lightly for a minute to chill. Pour to a chilled martini glass or similar, garnish with a few cranberries and complete it using a quick spritz of mandarin oil over the top.
